Does anyone have experience of how scribing for maths GCSE works in reality? The pupil can type well but school are wondering about a scribe as not sure how he would type maths GCSE answers.

Scribing in Maths is complex and needs a great deal of practising for both the pupil and the scribe in my opinion. Some software packages can help with the laying of calculations etc. etc.
I have also used prompt sheets for those pupils for whom articulation is effortful . So for example we might have the layout of 3 different ways to do a division sum on a table mat and the student then just points to the type rather than having to say 'standard long division' for example. This has also been supplemented by a picture for above the line, below the line, carrying etc..
Often the biggest challenge is in my opinion ensuring that the marks for showing working are obtained because often these young people can manage complex sums in their heads because for them it is easier. This means that in class whilst they are learning what for them is a slower way of working adaptations may need to be made to how many examples a young person does for example .
