Ways a student with no upper limbs can record their work

A colleague is working with a 4 year old student who has no upper limbs. The setting are looking for advice on ways the student can record their work - any advice & experience of this would be welcome.

Office 365 also has a dictate facility that I have found useful and incidentally it has a translate feature too which has been brilliant for some of my multilingual families.

By going to office.com and logging in with your school account on a web browser. Schools should have access to this.
